Dahi vada is made usually using washed urad dal or washed moong dal or combination of both.This is a very good side dish for your formal dinner or a good appetizer for summer. This recipe will make 25-30 dahi vadas.


Ingredients
3/4 cup of washed moong dal
1/4 cup of washed urad dal
2cups of yogurt
1/2 teaspoon of roasted ground cumin seed
1/2 teaspoon of red chilli powder
1 teaspoon of salt
3-4 tablespoons of tamarind sweet and sour chutney.

So that’s all you need to make dahi vada.


First we have to soak moong and urad dal together. So wash it really good and soak it in about 4-5 cups of water. It should be soaked at least 5-6 hours or you can soak it overnight.

Now when you are blending this it should be very fine paste. So don’t put water too much water in blending otherwise paste does not come up too good. So just add about maybe 1-2 spoons of water. And blend it on medium setting for about 2 minutes. Paste should be very smooth. So now you have to whip it for about 2-3 minutes. When you are whipping you should be whipping in circular motion.

Now on the flame, medium high and always use the flat frying pan to make dahi vadas. Use almost 1/2 inch of oil. Don’t put too much oil because then they cook right and they don’t puff up. And they will be hard in the center. Just drop them with your hands in pan.

These dahi vadas you can make it advance refrigerate for about a week or freeze for about a month and take it out when your time to use and soak it in the hot water. After you put them they should be about 1.5 times than what you have put in. Fry these for about 2 minutes. As you saw that they become golden brown and looking very good.

Right now I am just going to soak about 8 dahi vadas because that’s all I need for my evening dinner.

And as I said rest of it you can refrigerate for about a week or freeze it and when you are ready to eat just take them out and put them in hot water and soak it for about 2-3 minutes.

So Now whip your yogurt and make it very smooth and add about 1/4 teaspoon of salt and now squeeze the water just pressing with your both palms slowly and put it in yogurt. It should again soak in the yogurt for 3-4 minutes before you serve them. So that way yogurt will marinate really good. Just leave them for few minutes.

Transfer them in my serving dish qnd pour some more yogurt over.Sprinkle little bit more salt.You can adjust the salt to your taste. Now sprinkle roasted cumin seed powder and red chilli powder that is also use it to your taste. Finally add tamarind sweet and sour chutney.
