How to make birthday cake at home without oven and egg and with oven both
So, the recipe I'm going to share today is of Red Velvet Chocolate Cake which I will be preparing without eggs and oven. I'll also share with you how to prepare it in the oven. So, stick around. Let's get started.
INGREDIENTS-
1 + ½ cup (180g) all purpose flour/ maida, sifted
2 tablespoons (15g) cocoa powder
1 teaspoon (6g) baking soda
1 cup (200g) castor sugar
½ cup (120mL) vegetable oil
¼ cup (72g) yogurt
2 teaspoons (10mL) lemon juice
2 teaspoons (10mL) vanilla extract
4-5 teaspoons (20-25mL) red food colour
1 cup (237mL) milk + 1 tbsp vinegar
First off, we'll make buttermilk. Here, I've taken one cup of milk. Into this, add 1 tbsp of white vinegar. We will mix this and let it sit on the counter for 5-10 minutes. Meanwhile, we'll sift in the dry ingredients into the second bowl. Here, I've taken an all-purpose flour that is, maida. We will add baking soda into this and our 3rd ingredient, cocoa powder. We'll mix all the three ingredients with the help of a whisk. Now, we'll take sugar in another bowl.

Here, I've taken 1 cup of superfine sugar and half cup oil. You can use any oil which is devoid of strong taste and smell. Now, using a whisk, I'll mix both the ingredients well. This is very important because this is where you incorporate a lot of air into your batter which makes it light and fluffy.

Now, I'm adding lemon juice and homemade yogurt into it. Now, to give colour to our cake, we will add red food color to it. You can use Wilton gel colours. They are really good. So, try if you can use them because it gives you a really good bright colour.

Into this, we will add the maida mixture which we had kept aside earlier. We will not add all the mixture at once. First, we'll add only half of it and mix it well and we will add buttermilk alternatively. Now, when we are combining the dry and wet ingredients make sure to not overmix it. We will gently mix it with the help of a spatula. Here, if we overmix the batter our cake will turn out to be dense and heavy instead of light. So, finally, the batter is ready.

I will make my cakes in two 4-inches pans. Before we pour in the batter, we will grease the pans well and fix the parchment paper inside. If you do not have a parchment paper you can dust it with maida as well so that your cake doesn't stick. The setup to cook our cake is really simple and not much complicated. I will cook it in a cooking pot.

First, we will add salt into it and will place a stand above it. You can also use an inverted plate. We will cover the pot with a lid to preheat it for 10 minutes. After 10 minutes, we will place the pan inside the pot and cook it after covering it with a lid. It took 35-40 minutes to cook the cake on my induction.

Alright, one layer of our cake is getting cooked on the stove. I am going to cook the second layer in the oven. So I have preheated my oven at 180 degrees Celcius and now I will bake it for 30-35 minutes. Meanwhile, we will prepare our buttercream frosting. Here, I am taking 1 cup of butter. We will beat the butter really well at a high speed to make it fluffy. I am using an electric mixer. However, you can also use a hand whisk. We will add 1 tsp of vanilla extract into this and mix it. And now, our last and final ingredient 2 cups of powdered sugar. So, my cake is completely cooked after 40 minutes on the stove. And now, I will assemble the two layers and decorate it with buttercream frosting.
NOTES-
1) vinegar and lemon juice make the cake soft and velvety, so I would recommend you use both
2) use a good quality red colour. The one I used was not a great brand so my colour faded after cooking.
3) 4-5 tsp of liquid colour OR 3-4 drops of gel colour are enough to give the cake a nice bright red colour
4) My preferred brand is Wilton. I love their gel colours
5) I cooked my cake on induction (200C) and it took 40+ min. It might take lesser on medium flame on a regular stove. So keep an eye on your cake
6) You can use the same recipe to bake a cake at 180C in the oven. Bake for about 35 min
7) I made two small 4" cakes. You can also use one 8" pan
8) If you don't have parchment paper, dust your pan with flour and tap out the excess
9) You can also decorated the cake with cream cheese frosting/ chocolate ganache
