Genoise - How to make Vanilla sponge cake ; soft, fluffy cake sheets (Genoise, Génoise)

Today I will tell you the recipe of making soft, fluffy cake sheets (Genoise, Génoise).

Make a delicious sponge cake through this recipe because you can make a cake fluffy with egg bubbles without using baking powder or soda.

Ingredient

4 eggs

sugar 120ml+2table spoon(120 g)

corn syrup 1teaspoon+1/2teaspoon(10g)

flour 240ml(120g) 

butter 2table spoon

milk 40ml 

vanilla extract 1 teaspoon

Take 4 eggs and sugar [120ml+2table spoon(120 g)] with corn syrup [1teaspoon+1/2teaspoon(10g)] in a bowl. Place the bowl on hot water, increase the temperature of the liquid and melt the sugar(40 degrees). If you don't have a thermometer, put your finger in the liquid to make sure it's warm.

Top with bowl of butter 2table spoon and milk 40ml in hot water that has not yet cooled. Whip sugar-melted egg water at high speed. If you don't make sure the egg foam is made, the bubble will break later. Whip until foam is firm and stable. Whip at low speed for another 2 minutes. It is the process of breaking large bubbles to make a soft, dense meringue. When the meringue is dropped , it should be piled up without spreading and if this happens means batter is correct Sift 240ml(120g) of flour in mixture. Mix the powder scattered. Mix until no flour is visible.

Add 1 teaspoon vanilla extract to a warm liquid (butter, milk). Add a little bit of cake batter and mix. Put it in the batter and mix again. If not mixed enough, the bottom of the completed cake will be lumped together. Mix the batter until glossy. If you didn't form the egg bubble properly earlier,  then  the egg bubble will break up in the process.

Spread the paper foil on the pan and pour the dough over it.(18 cm in diameter). Shock the pan to remove the big bubbles. Bake in a preheated 160 degree oven for 40 to 45 minutes. Press lightly on top of cake and bake more if not elastic. Shock the cake pan to remove moisture from the inside. Please cool it down enough. Then serve it in a plate. Your soft, fluffy cake sheets (Genoise, Génoise) is ready.
